Sushi Rin officially opened in Sheung Wan in January 2019. Managed personally by Mr. Marcus Huang and Chef Rie, it offers a unique dining experience with fresh, seasonal ingredients prepared on-site. The restaurant provides a pure and attentive Omakase experience.

With the chef's exceptional traditional skills, the restaurant aims to present the most authentic and high-quality Edomae sushi flavors, promoting the essence of traditional Edo-style sushi.

About the Chef

Leung Wai-lap

Chef Leung Wai-lap began his culinary career at the age of 16, and through sheer talent and determination soon rose to the rank of Executive Chef. Feeling unfulfilled and hungry to master the art of making sushi, he stepped back into the role of apprentice with Kenjo Shunji at Kenjo, one of the first refined Japanese restaurants in Hong Kong, and a magnet to the rich and famous.

Beginning from scratch, he spent the first year learning how to properly wash, soak, and cook rice. His passion for and prowess in sushi stems from the realisation that every single piece is unique, with each ingredient telling a story and adding another dimension to a harmonious taste.

Now a 20-year veteran of the art, Chef Leung enjoys a loyal following for his brand of Edomae-style sushi omakase at Sushi Rin. His guiding principles are simplicity achieved through meticulous attention to detail and upholding tradition while striving for perfection.
