MU focuses on delivering refined seasonal cuisine, perfectly embodying the core philosophy of “Shun.” In Japanese, “Shun (旬)” refers to the peak season of an ingredient, and every dish at MU is crafted with premium seasonal seafood and rare delicacies air-flown from Japan, ensuring that guests savor the purest flavors and the unique essence of each season.

Staying true to its respect for nature, MU carefully selects seasonal treasures such as tender bamboo shoots in spring and matsutake mushrooms in autumn. These ingredients are presented with simplicity and precision—through simmering, steaming, or grilling— to preserve their natural essence. Each dish reflects a reverence for the changing seasons, inviting diners to experience nature’s gifts with every bite.

At MU, we take pride in our seasoned culinary team. Our head chef began his journey under the mentorship of Master Kenjo, and over the past two decades has honed his craft in renowned kitchens such as Sushi Shin and Asahi. With expertise in traditional tempura techniques, he masters the delicate balance of timing and oil temperature, ensuring that every dish showcases the finest expression of its ingredients.

Beyond this foundation, our head chef has devoted himself to the in-depth study of Shun cuisine, developing unique methods that pursue the perfect harmony of time, temperature, and ingredient quality. His refined knife work adapts precisely to each fish type and cut, elevating the freshness and flavor of our seasonal sashimi selections.
