Chef Introduction

Chef Leung Wai Lap

Chef Leung began his culinary journey at the age of 16 in a Japanese restaurant, quickly rising to the position of head chef within just a few years. Yet, unsatisfied with mediocrity, he aspired to elevate his craft to an even higher level.

He chose to relinquish his title as head chef and returned to the fundamentals, joining Kenjo Japanese Restaurant—one of the first authentic sushi restaurants in Hong Kong operated by Japanese masters—starting anew as an apprentice.

Chef Leung firmly believes that to become a true shokunin (artisan), it is not only about mastering skills but also about nurturing the inner drive to improve and strive for perfection. “Preserve tradition, pursue excellence” embodies his philosophy towards Japanese cuisine. Upholding the teachings of his mentors, he approaches every detail with meticulous dedication, ensuring that the craftsmanship and flavors of tradition are faithfully preserved.
